The Appenzell region of Switzerland is home to one of the country's greatest wheels, Appenzeller. Tangy, mature-flavored Appenzeller dates back some 700 years. While the ingredients are simple enough-fresh part-skim cow's milk, cheese culture salt and enzymes-the special care bestowed upon the wheels turns out a cheese with an amazing and memorable flavor.
