Agata's Sicilian Spring Pasta

INGREDIENTS
1 lb Bag A&V Penne Rigate
4 medium zucchini, sliced
6 Asparagus Chopped
6 cherry tomatoes cut in ½
½ cup of fresh or frozen peas
1 garlic clove, chopped
1 shallot chopped
½ cup fresh mint
⅓ cup fresh basil
1 cup chicken stock
parmigiano reggiano, salt, pepper, to taste
Agata & Valentina Extra Virgin Olive Oil (for pan)

PREPARATION

Bring 4-6 quarts of water to a rolling boil. Add salt to taste, if desired. Add the contents of the package of pasta to boiling water. Stir gently. return to a boil. For "Al Dente" pasta, cook approximately 6 minutes. Drain pasta once done and set aside.
In the meantime, while the pasta is cooking, add a little oil to your pan and sauté the shallots and garlic together, add the zucchini and let it cook for about 1-2 minutes then add the asparagus, chopped cherry tomatoes, and peas. Let it cook for about 5-10 more minutes. Add in the chicken stock. After you drain your pasta, add it to your sauté pan and toss with veggies. Finish with fresh mint, basil and parmigiano reggiano and a touch of fresh ground pepper. Buon Appetito!

INGREDIENTS
8 oz. pistachio nuts, shelled and peeled naturally (4 of 8 oz. to be lightly roasted)
1 cup of basil
½ cup of parsley
½ cup of extra virgin olive oil (feel free to add more if needed)
½ cup of grated parmigiano reggiano cheese
salt and pepper to taste

PREPARATION

We recommend you use a food processor or blender. Blend all the ingredients except for the cheese, then add salt and pepper to taste. When you've reached the consistency of a paste, add the parmigiano reggiano and mix everything together.
Pesto can be stored in a refrigerator for a few days or frozen in portions.

Store your Sicilian pesto in the refrigerator or freezer until ready to use.

A good condiment for a pound of pasta.

We’re not sure which will stump you first: the pronunciation of the name or the concept of ORGANIC water...

We can’t do much about the former (oh, the Welsh and their consonants!), but we can explain the latter: This is the first “organic” water, because it comes from ancient sources beneath certified organic fields on the Llanllyr Farm in Wales. The farm has been in the same family's hands since the year 1720, has been accredited organic by the Soil Association, and has never, ever been farmed non-organically. The taste is very clean, refreshing, and soft: a perfect accompaniment for meals!

Once you try our A&V Sicilian Monti Iblei DOP extra virgin olive oil you’ll have a hard time going back to the regular stuff. This olive oil is, without exaggeration, one of the best on the planet. It is known for its fresh, herbaceous aroma, and for a flavor reminiscent of green Sicilian tomatoes and freshly cut grass with a peppery finish. The delicate complexity of the flavors and the seductive nose of this oil are truly unique, and we couldn’t be happier to be able to offer it to our customers.

Our Monti Iblei is harvested, pressed, and bottled for us at a family-owned farm and mill in the Chiaramonte Gulfi region, located in the heart of the volcanic Iblei Mountains in southern Sicily (the DOP designation means that oils labeled as ‘Monti Iblei’ must come from this very specific region). The olives here, primarily of the Tonda Iblea variety, come from century-old trees grown in rich volcanic soil. The age of the trees correlates with low productivity, which makes the supply of Monti Iblei oil scarce in comparison with the feverish demand for such a high-quality oil.

Our recommendation: Seize the day and enjoy the Monti Iblei while it’s here!

36 hours from the cow to our store! This fantastic milk is from ultra-healthy, responsibly-raised cows in Dutchess & Colombia Counties that are grass-fed in summer & hay-fed in winter and are never, ever given antibiotics or growth hormones. Because these select cows are exceptionally healthy and well-raised, their milk tests at extremely low bacteria & somatic cell counts - much, much lower than levels required by the USDA. As a result, their milk is subjected to a much shorter pasteurization process than commercially-raised cows,which in turn means less change in flavor.
