La Casa del Grano Fregola
Fregola is a unique Sardinian semolina pasta product, produced by hand-rolling semolina dough into small spherical beads. The raw fregola balls are then twice-dried, once in the sun and once in the oven, creating an uneven surface, nubby texture and toasty flavor. Moistened with vegetables and stock, they make a lovely bed for fleshy fish or even meaty stews. Try it in soups, instead of rice or couscous, or even with a nice pasta sauce.
